I live in NJ, official home of the diner. You can stand at the door of a diner, throw a rock and hit another diner. They all have delicious coffee. What are they doing different? Does it have to do with the coffee sitting around on the warmers?

Probably because they’ve been using the same brand of coffee and the same pots for years. It’s kind of like getting eggs off the grill…they always taste a little bit like the onion and all the rest of the food that’s been cooked on there from a minute ago to 50 years ago.
Always glad to see when they don’t serve that road tar that people call coffee. I like a strong cup as much as the next guy, but who really likes paying $4 for a cup of dino-piss?
Gotta love a diner…Mastori’s is Mid-way (maybe a little south of that) from Philly to NYC on Route 130/206 in Bordentown (Exit 7 off the NJTPK I think?). Good coffee but they have BANGIN rolls and danishes that they bring out before the meal. One of the best diners in NJ in my opinion. Do yourself a favor if you’ve never been.

Most diners use professional coffee makers which have a reserve of already hot water, so when they brew another cup and add more cold water, the hot water that’s already in the reserve is what is dripping down to make the fresh pot.
The new water placed in the reserve will be heated before the next pot needs to be brewed. I learned this from a friend who works in a coffee shop. Diners probably also use the best coffee as quality of coffee varies. A good diner will also make fresh coffee every 10 - 20 minutes to ensure freshness.
Most people at home have just regular coffee makers which the cold water you just poured into the coffee maker is heated while making coffee.

Their Coffee comes from a restaurant vendor not a grocery store. The blend is not the same. Recently while I was at my local diner, the vendor was talking to the owner. I told him NOT to change the coffee that was coming to this diner,,,I liked it.
10 min later he walked by my table and threw 5 or 6 pkg of his coffee in front of me. I took it home and used it in my coffee maker…the same as in the diner!
Keep your coffee maker clean, clean seasonally with vinegar. Let the vinegar go through the brewing process a couple times. Don’t wash the pot with soap. Clean water and a brush will do.

Also, is it the taste or smell? If there is too much smell of coffee it is actually not good! It means that the smell instead of going to your cup goes out. It is said that it is actually not good, as the coffee loses its flavour.

I’ve always been a real believer that a lot of times, not always for sure, but a lot, that when someone else is making and serving it to you, it sure seems to taste better…and you don’t have to clean any dishes either!

Maybe you’re bad at making coffee? Diners make thoroughly average coffee at the best of times, and frankly repulsive coffee at the worst. At least, that’s my experience.

some off their coffee machines are hooked up to the restroom water pipes,must be the reason…..enjoy your java….
