I wanna make coffee cake muffins for my family. I haven’t had one since I was a little girl. I need a quick, easy, and not so much ingredients. Every recipe I look up has a ton of ingredients, So please give me a quick and easy recipe for coffee cake muffins? Thanks soo much!

1 cup sugar
2 eggs
1 cup yoghurt
2.1/2 cups flour
2 tsp baking powder
Preheat oven to 400oF, prepare pans.
Put the first four ingredients into a bowl & mix well. Add the dry mix to the wet mix until just combined.

2 t Baking powder
1/2 t Salt
1/4 c Butter
1/2 c Sugar
1 Egg
2 T Plain yoghurt
3/4 c Milk
1/2 t Vanilla*
———————————SPICE MIX———————————
1/2 c Packed brown sugar
2 T Flour
1 t Cinnamon*
Spice mix: stir together. Batter: Mix dry ingredients and make well.
Cream butter, sugar and egg. Add yoghurt milk and vanilla. Pour into well and stir to moisten. Fill greased muffin tins 1/3 full. Sprinkle on spice mix. Cover with more batter, filling to 2/3 full. Bake 400 20-25 min.
*Variations: 1. Decorate or glaze while hot with simple, thick icing made from powdered sugar and a little liquid.
2. Replace some or all of vanilla with another extract such as almond.
3. For a crunchy top, place half of spice mix inside muffins,and the rest on top before baking.
4 Replace some or all of cinnamon with other spice (s) such as nutmeg.
5. Sprinkle a very small amount of finely grated citrus peel over first layer of batter before the spice mix.
6. Use rum or other liquor instead of vanilla.

1/2 ts Salt
1/4 c Vegetable shortening
1/2 c Milk

12 Pecan halves — optional
Preheat oven to 375 degree F. Grease 12 muffin pan cups; set aside. In a small bowl; mix together pecans, brown sugar, 1 T flour, cinnamon, nutmeg, and butter; set aside.
In a medium bowl, sift together 1 1/2 cups flour, granulated sugar, baking powder and salt; cut in shortening. In a small bowl, blend egg with milk.Add to dry ingredients with half of the pecan mixture,stirring until just blended. Spoon batter into muffi cups; sprinkle with remaining pecan mixture. Garnish each muffin with a pecan half. Bake 15 minutes or until cake tester inserted in center comes out clean. Remove muffins from pan to cool on wire rack.
Mixing muffin ingredients requires a special, but easy-to-learn technique. The liquid ingredients (milk, eggs, etc.) are beaten together and then added all at once to the dry ingredients. Mixing is kept to a minimum–just enough to moisten the dry ingredients.The batter should be lumpy, not smooth. These muffins freeze very well.

2 oz Ghirardelli Sweet Dark
-Chocolate
2 tb Packed brown sugar
1/2 ts Grated fresh orange rind
1/2 ts Ground cinnamon
1/4 ts Instant coffee
1 tb Cold butter
1/4 c Pecans
—–COFFEE CAKE MIXTURE—–
1 3/4 c Unsifted flour
2/3 c Sugar
1 tb Baking powder
1/2 ts Salt
1/2 c Cold butter
1 Egg
1/2 c Half & half
1 Egg yolk
2 ts Water
Servings: 12
DIRECTIONS: Crumble mixture: Place pieces of broken chocolate and brown sugar in food processor or blender. Process about 15 to 20 seconds or until as fine as coarse ground coffee. Add orange rind,cinnamon, coffee, butter and pecans. Process a short time until nuts are finely chopped. Set aside.
Coffee Cake: Place flour, sugar, baking powder and salt in food processor; process for a few seconds to combine or prepare by hand using a pastry blender. Sprinkle small butter cubes over dry ingredients.
Process only 5-6 seconds to distribute butter into very small pieces, or use pastry blender. Transfer to a bowl. Spread mixture to form a well in the center. Beat whole egg lightly with half & half. Pour, all at once, into dry ingredients. Using a folding motion, stir to combine ingredients- mixing only until liquid is all absorbed. (Do not over mix. This should take only 15-20 hand strokes.) Sprinkle the crumble mixture over dough in bowl. With a table knife, draw across in 2 directions to marble crumble with dough. (Do not combine thoroughly.) Heavily grease cups of muffin pans, disposable foil pans, glass custard cups or cupcake liners. When portioning dough, mixture will be
rough but will come together after baking. To make large size muffins, fill cups level to top, yielding 9 muffins. For medium muffins, fill cups 2/3 full, yielding 12 muffins. Prepare egg wash by mixing water
with egg yolk. Brush muffins with egg wash. Bake at 400-F for 15-17 minutes, depending upon the size of the muffins. Muffins should be golden brown and baked
in the center. Cool in pans about 5 minutes to firm muffins before removing. Serve warm.

Coffeecake muffins
1/2 cup softened butter
1/2 cup sugar
2 eggs
1 cup sour cream
1 tsp. vanilla
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
Marble mixture:
1/2 cup brown sugar
1/2 cup finely chopped walnuts
1 tsp. ground cinnamon
(save 2 T. for top of muffins)
Cream sugar and butter. Add eggs, sour cream and vanilla. Mix in flour, baking powder, soda and salt. Beat well. With a knife, cut the marble mixture into the batter. Do not mix. Pour batter into 11 or 12 muffin cups that are well greased. Sprinkle sugar mixture on top. Bake at 375 degrees for 22 minutes.

The easiest….probably would be to go & buy a coffee cake mix at the store & make them out of that.
