I started going to my local coffee shop just because the guy that makes the coffee is so hot! How should I try to get to know him? Clever, cute things to say? It can be busy in the mornings at that coffee shop too.

I work at a coffee shop, and like you said it gets busy in the mornings - this would be the worst time to go talk to him or ask him out. Go in the evening when he’s working and it’s slower, it’s easier to start up a little conversation. Just ask things like how he likes working there, what he gets to drink, or ask him to recommend a drink to you, stuff like that. If you guys seem to have a spark, just say something like “well I have to go now, but how would you like to continue chatting outside of work sometime” or whatever. good luck!
